Hurrah for Skinny Pancakes!


If you’re anything like me, when it comes to that most special of holidays, Shrove Tuesday Pancake day, you just can’t help yourself. Seriously. Pancakes are bloody amazing; I could eat my body weight in these. Given that I am barely still holding firm to my New Year’s Resolutions concerning all things food, clearly I needed an alternative for this most sacred of days.

There’s lots of different versions of these on the internet, but basically, all you need is a banana and two eggs. I added a couple of other bits that I thought would help with the taste and texture…because i’m fancy like that. But really, you could get away with just the two ingredients just fine. These do seem to have a bit of a Marmite-effect, whereby folks seem to either love them or loathe them, but at around 42 calories per pancake and the taste perfectly acceptable, I am firmly in the ‘love’ camp (just don’t do what I do and screw up all your wholesomeness by drowning them in Maple Syrup).

Here’s my version:

SKINNY PANCAKES (makes about 6)

1 Banana

2 Eggs

1/8 tsp Cinnamon (more if you like)

1/8 tsp Baking Powder

pinch of Nutmeg

First, mash your bananas in a bowl really really well. Don’t be lazy about it-there shouldn’t be any lumps. Then thoroughly mix in the Cinnamon, Nutmeg and Baking Powder. In a separate bowl whisk your eggs till they are really lovely and fluffy, and then combine to make a batter.

Heat up a non-stick frying pan sprayed with Fry Light (you could use butter, but if you’re going all out with the likes of butter, why not just make delicious regular pancakes?). When it’s hot, pour a smallish amount of batter into your  pan. You want these a fair bit smaller than regular pancakes, otherwise they’re too difficult to flip. Give them a couple of minutes each side, then finish with your favourite toppings.

      Hi, sorry you’re having this problem! I’m very new to this so no idea why that should be, but I will investigate and try get it sorted!
